Instructions

  1. Brown the Ground Beef
    First, heat a large pot over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked. Be sure to drain any excess fat and set the beef aside for later.
  2. Sauté the Aromatics
    Next, in the same pot, add the diced onion and minced garlic. Stir occasionally and let them sauté for about 2-3 minutes, or until the onion becomes translucent and fragrant.
  3. Add the Vegetables
    Then, toss in the diced carrots and celery. Stir everything together and cook for another 3-4 minutes, allowing the vegetables to soften slightly.
  4. Incorporate the Tomatoes and Broth
    Add the diced tomatoes, tomato paste, and beef broth to the pot. Stir well to combine all the ingredients. Bring the mixture to a gentle boil, and then reduce the heat to low to simmer.
  5. Season the Soup
    At this point, sprinkle in the Italian seasoning and salt and pepper to taste. Let the soup simmer for 15-20 minutes so the flavors can meld beautifully.
  6. Cook the Noodles
    Meanwhile, cook the egg noodles according to the package instructions in a separate pot. Once done, drain the noodles and set them aside.
  7. Combine and Serve
    Finally, add the cooked noodles and browned ground beef to the soup. Stir everything together and let it heat through for 2-3 minutes. Serve hot, garnished with fresh parsley or Parmesan cheese for an extra touch of flavor.
