Description

Alice Springs Chicken is a savory dish featuring tender chicken breasts topped with crispy bacon, melted cheeses, and tangy barbecue sauce. It’s perfect for family dinners or special gatherings.

Ingredients

  • Chicken breasts: 4 pieces (about 6 oz each)
  • Bacon: 8 slices
  • Cheddar cheese: 1 cup, shredded
  • Swiss cheese: 1 cup, shredded
  • Barbecue sauce: ½ cup
  • Olive oil: 2 tablespoons
  • Garlic powder: 1 teaspoon
  • Paprika: 1 teaspoon
  • Salt: To taste
  • Black pepper: To taste
  • Fresh parsley (optional): For garnish

Instructions

  1. Prepare the Chicken: Rinse the chicken breasts under cold water, pat them dry, and set aside.
  2. Marinate: In a bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Coat the chicken thoroughly and let it marinate in the refrigerator for at least 30 minutes.
  3. Cook the Bacon: Fry the bacon in a skillet until crispy. Remove it and set it aside on a paper towel to drain the excess grease.
  4. Preheat the Oven: Set your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  5. Assemble the Dish: Arrange the marinated chicken breasts in the baking dish. Layer the cooked bacon over the chicken, and generously sprinkle the cheddar and Swiss cheeses over the top.
  6. Bake: Cover the dish with aluminum foil and bake for 25 minutes. Then, uncover and bake for an additional 10-15 minutes or until the cheese is bubbly and golden brown. Ensure the chicken’s internal temperature reaches 165°F (75°C).
  7. Serve: Garnish with chopped parsley and serve hot with your favorite sides.

Notes

  • For extra flavor, let the chicken marinate overnight.
  • If grilling, cook the chicken on medium-high heat for 6-7 minutes per side before adding toppings.
  • Sautéed mushrooms or bell peppers can be added for additional depth of flavor.
  • Always use a meat thermometer to ensure the chicken is fully cooked without overcooking.
